Germination of seed.

In our backyard, potatoes that have spent the winter in the soil are germinating.  

All gardening books say that potatoes are so vulnerable to the cold that they will not be planted in the soil in February yet in the sun. Therefore, usually, everyone germinates potatoes in the sun in a greenhouse or indoors, waiting for the day to be planted in the spring. 

I learned that carrots can overwinter in the soil, potatoes can overwinter and germinate, and they are very delicious in our organic garden.
